Posted @withrepost • @nuts_for_life Cheat’s hazelnut fudge 😍 This has got to be a winning Mother's Day treat (even better if you can get someone else to make it 😉) Vegan, dairy-free recipe from @panaceas_pantry below 👇 🌰You’ll need:
1 1/2 cups toasted hazelnuts.
200g vegan choc
1/2 cup coconut milk.
1/2 cup nut butter of choice.
1/2 cup rice malt syrup.
2 tsp pure vanilla extract. 🌰Method.
1. Chop up chocolate into small pieces and place in a large, heat proof bowl. Set aside.
2. Add coconut milk and rice malt syrup to a saucepan. Heat over a small flame to about 40 degrees C (or just above body temp- check by dabbing on wrist). Whisk throughout. Once warm, pour over chocolate.
3. Immediately wish mixture until a ganache forms. Add nut butter and vanilla, and whisk until uniform. Add 1/2 the nuts, fold through and pour into a lined tray. Top with remaining nuts and set in fridge! 🌰NOTES: To roast hazelnuts, place on a lined baking tray. Roast for approx 15 mins at 180 degrees- turning every 5 mins. Be very careful not to burn. Once out of the oven, pour nuts into a clean tea towel. Bunch up nuts, and roll towel to remove skins. Try your best to remove all skins (use fingers to help the stubborn ones), and set aside!
